Ingredients
  

Chicken and Seasoning
  • 4 boneless, skinless chicken breasts about 600g total
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Vegetables and Aromatics
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes
  • 1 zucchini sliced into half-moons
  • 1 red bell pepper sliced
  • 1/2 red onion sliced
  • 2 tbsp fresh parsley chopped

Method
 

Cooking Steps
  1. Pat the chicken dry with paper towels.
  2. Combine smoked paprika, garlic powder, oregano, salt, and pepper in a small bowl.
  3. Drizzle 1 tablespoon of olive oil over chicken and coat thoroughly with the spice mixture.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Sear chicken for 4-5 minutes per side until golden and cooked through.
  6. Remove chicken to a plate and tent with foil to rest.
  7. Sauté minced garlic and lemon zest in the same skillet for 30 seconds.
  8. Add cherry tomatoes, zucchini, bell pepper, and onion; sauté for 4-5 minutes.
  9. Deglaze the pan with lemon juice.
  10. Return chicken to the skillet, heat through for 1-2 minutes, and garnish with parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water or broth.
