  • 1 lb chicken breast, cut into bite-sized pieces
  • 3 tbsp sweet chili sauce, halal-certified
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 2 cups cooked jasmine rice hot
  • 1 cup broccoli florets lightly steamed
  • 1 large carrot, julienned
  • 1/2 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds for garnish
  • Salt and pepper to taste

Method
 

Cooking Steps
  1. Whisk together sweet chili sauce, soy sauce, honey, ginger, and garlic in a medium bowl.
  2. Pat chicken dry and season with salt and pepper.
  3. Heat sesame oil in a large skillet over medium-high heat.
  4. Sear chicken in a single layer for 2-3 minutes until golden, then stir-fry for 3-4 minutes until cooked through.
  5. Pour sauce over chicken and cook for 1-2 minutes until thickened and glossy.
  6. Remove from heat and stir in half of the green onions.
  7. Divide rice into bowls, top with chicken, steamed broccoli, carrots, and bell peppers.
  8. Garnish with sesame seeds and remaining green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Keep rice and toppings separate until serving.
