Ingredients
  

Crust
  • 2 cups graham cracker crumbs about 2 sleeves
  • 1/2 cup unsalted butter melted
Filling
  • 2 cups heavy cream
  • 1 can sweetened condensed milk 14 oz
  • 1/2 cup fresh key lime juice about 8-10 key limes
  • 2 tbsp key lime zest
  • 1 package cream cheese 8 oz, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup lime curd store-bought or homemade
Garnish
  • 1/2 cup whipped cream
  • 1/4 cup lime zest

  • 9x13-inch baking dish or 8 individual trifle cups
  • Large mixing bowl

Method
 

Assembly
  1. Combine graham cracker crumbs and melted butter in a medium bowl, then press firmly into your chosen dish and refrigerate.
  2. Beat cream cheese and sugar in a large bowl until smooth, then mix in the sweetened condensed milk.
  3. Gradually stir in the lime juice until thickened, then fold in the lime zest and vanilla.
  4. Whip the heavy cream in a separate bowl until stiff peaks form and gently fold it into the lime mixture.
  5. Layer half the lime mixture over the crust, drizzle with half the lime curd, and swirl gently.
  6. Add half of the remaining lime mixture, the rest of the curd, and finish with the final layer of lime mixture.
  7. Cover and refrigerate for at least 6 hours to set.
  8. Top with whipped cream and lime zest before serving.

Notes

Store covered in the refrigerator for up to 3 days. Can be frozen for up to 1 month; thaw in the fridge overnight.
