  • 1.5 lb beef sirloin, thinly sliced
  • 2 tbsp olive oil, divided
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 8 oz white mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp halal Worcestershire sauce
  • 8 slices provolone cheese
  • 4 cups fresh spinach for serving
  • 1 tbsp olive oil for drizzling, optional
  • fresh parsley chopped, for garnish

Method
 

Preparation
  1. Place beef in the freezer for 15 minutes, then slice thinly against the grain.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Sear beef in batches until browned, then remove and set aside.
  4. Add remaining oil to the skillet and sauté onions, bell peppers, and mushrooms for 6-8 minutes.
  5. Stir in minced garlic and cook for 1 minute.
  6. Return beef to the skillet and season with salt, pepper, paprika, and Worcestershire sauce.
  7. Top with provolone cheese, cover, and cook until melted.
  8. Divide spinach into bowls and top with the beef and vegetable mixture.
  9. Garnish with parsley and drizzle with extra olive oil if desired.

Notes

Store in an airtight container for up to 3 days. Keep spinach separate to avoid wilting. Freeze the beef and vegetable mixture for up to 2 months.
