Preparation
- Place beef in the freezer for 15 minutes, then slice thinly against the grain.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Sear beef in batches until browned, then remove and set aside.
- Add remaining oil to the skillet and sauté onions, bell peppers, and mushrooms for 6-8 minutes.
- Stir in minced garlic and cook for 1 minute.
- Return beef to the skillet and season with salt, pepper, paprika, and Worcestershire sauce.
- Top with provolone cheese, cover, and cook until melted.
- Divide spinach into bowls and top with the beef and vegetable mixture.
- Garnish with parsley and drizzle with extra olive oil if desired.
Notes
Store in an airtight container for up to 3 days. Keep spinach separate to avoid wilting. Freeze the beef and vegetable mixture for up to 2 months.
