Brownie Batter
  • 1 cup unsalted butter plus more for greasing
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup hot water or brewed coffee
Vanilla Frosting
  • 4 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk as needed

Method
 

Instructions
  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch pan.
  2. Melt butter in a saucepan over medium heat; stir in sugars and molasses until smooth.
  3. Remove from heat, cool slightly, then whisk in eggs one at a time.
  4. Stir in vanilla extract.
  5. Whisk dry ingredients (flour, cocoa, spices, baking powder, salt) in a separate bowl.
  6. Fold dry ingredients into the wet mixture until just combined.
  7. Stir in hot water or coffee until the batter is smooth.
  8. Pour into the prepared pan and tap against the counter to remove air bubbles.
  9. Bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  10. Cool completely on a wire rack.
  11. Beat cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and milk until fluffy.
  12. Spread frosting over cooled brownies, cut into squares, and serve.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 3 months.
