Ingredients
  

Cookie Base
  • 2 cups brown sugar packed
  • 1 1/2 cups unsalted butter softened
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins optional
Vanilla Glaze
  • 2 cups powdered sugar
  • 3-4 tbsp milk or water
  • 1 tsp vanilla extract

Method
 

Instructions
  1. Preheat oven to 350°F and line a 9x13-inch baking pan with parchment paper.
  2. Cream together the brown sugar and softened butter in a large bowl until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Fold in the rolled oats and raisins.
  7. Press the dough evenly into the prepared pan.
  8. Bake for 25-30 minutes until edges are golden brown and a toothpick comes out clean.
  9. Cool the bars completely in the pan on a wire rack.
  10. Whisk powdered sugar, milk, and vanilla in a small bowl to create the glaze.
  11. Lift bars out using parchment overhang and drizzle evenly with the glaze.
  12. Cut into 12 bars once the glaze has set.

Notes

Store in an airtight container at room temperature for up to 5 days. For longer storage, wrap individually and freeze for up to 3 months.
