Ingredients
  

Pasta and Protein
  • 8 oz spaghetti
  • 1 lb boneless skinless chicken pieces diced
Vegetables and Aromatics
  • 2 tbsp olive oil divided
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
Sauce and Seasoning
  • 1 can diced tomatoes undrained
  • 1 can tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Garnish
  • 1/4 cup fresh parsley chopped
  • 1/4 cup Parmesan cheese grated

Method
 

Cooking Process
  1. Boil spaghetti in salted water until al dente (8-10 minutes). Reserve 1/2 cup pasta water, drain, and set aside.
  2. Season chicken and sear in 1 tbsp olive oil in a skillet until browned and cooked through. Remove and set aside.
  3. In the same skillet, heat remaining oil. Sauté onions, garlic, and bell peppers until softened.
  4. Add tomatoes, tomato sauce, and spices. Simmer for 5-7 minutes.
  5. Return chicken to the skillet, then toss in the cooked spaghetti. Add reserved pasta water as needed to reach desired consistency.
  6. Garnish with fresh parsley and Parmesan cheese before serving.

Notes

Store in an airtight container for up to 4 days in the fridge or 3 months in the freezer. Reheat in a skillet with a splash of water.
