Ingredients
  

Chicken and Aromatics
  • 4 pieces boneless, skinless chicken about 600g
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
Sauce Ingredients
  • 1/2 cup fresh lime juice about 4 limes
  • 1/2 cup chicken broth
  • 1/4 cup grape juice halal alternative to white wine
  • 1/2 cup fresh cilantro, finely chopped
  • 2 tbsp butter
  • 1/4 cup heavy cream optional
Seasonings
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Cooking Steps
  1. Pat chicken pieces dry with paper towels until no visible moisture remains.
  2. Season both sides evenly with salt, black pepper, cumin, and smoked paprika, pressing spices into the meat.
  3. Whisk together lime juice, chicken broth, and grape juice in a small bowl.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering.
  5. Sear chicken in a single layer for 5-6 minutes per side until golden brown and internal temperature reaches 165°F.
  6. Reduce heat to medium-low, add garlic, and sauté for 30 seconds.
  7. Pour in the lime juice mixture, scraping up browned bits from the bottom of the pan.
  8. Stir in butter and optional heavy cream until the sauce thickens and coats the chicken.
  9. Remove from heat, stir in fresh cilantro, and let rest for 2 minutes before serving.

Notes

Store in an airtight container for up to 4 days. Reheat in a covered skillet over medium-low heat with a splash of broth.
