Dressing Preparation
- Whisk together the red wine vinegar, Dijon mustard, minced garlic, and dried oregano in a small bowl until smooth.

- Season with salt and black pepper to taste and set aside.
Salad Assembly
- Wash and dry the greens thoroughly, tearing large leaves into bite-sized pieces.
- Combine greens, cherry tomatoes, cucumber, red onion, black olives, and pepperoncini in a large bowl.
- Top the salad with shredded mozzarella and grated Parmesan.
- Drizzle the dressing over the salad just before serving and toss gently to coat.
