  • 2 lbs boneless skinless chicken breasts, cooked and shredded
  • 1 bag frozen tater tots 32 oz
  • 1 cup milk
  • 1 can condensed cream of chicken soup 10.5 oz
  • 1 can condensed cream of mushroom soup 10.5 oz
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 packet ranch seasoning mix 1 oz
  • 6 slices turkey bacon, cooked and crumbled Halal alternative
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat oven to 375°F and grease a 9x13 inch baking dish.
  2. In a large bowl, combine shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, milk, and ranch seasoning until smooth.
  3. Season the mixture with salt and pepper to taste.
  4. Spread half of the tater tots in an even layer on the bottom of the baking dish.
  5. Pour the chicken mixture over the tater tots and spread evenly.
  6. Sprinkle 1 cup of cheddar cheese over the chicken layer.
  7. Arrange the remaining tater tots on top in a single layer, pressing them gently into the cheese.
  8. Bake uncovered for 40-45 minutes until the casserole is bubbly and tots are golden brown.
  9. Remove from the oven, sprinkle with the remaining cheese and crumbled turkey bacon.
  10. Return to the oven for 5 minutes until the cheese is fully melted.
  11. Rest the casserole for 5 minutes, garnish with green onions, and serve warm.

Notes

Store in an airtight container for up to 4 days in the fridge. For freezing, assemble without bacon or green onions and freeze for up to 3 months.
