  • 4 large eggs
  • 1 cup heavy cream
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
Garnish
  • 1/2 cup whipped cream optional
  • 1/4 teaspoon ground cinnamon for dusting

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a 9-inch baking dish or 8 ramekins.
  2. Whisk pumpkin puree, eggs, cream, milk, sugars, vanilla, and spices in a large bowl until smooth.
  3. Mix cornstarch with 2 tablespoons of the pumpkin mixture to create a slurry, then stir into the main mixture.
  4. Whisk the mixture for 2 minutes until combined and slightly frothy.
  5. Pour into the prepared dish and tap to release air bubbles.
  6. Place the dish in a roasting pan and add hot water until it reaches halfway up the sides of the baking dish.
  7. Bake for 45-55 minutes for a large dish or 25-30 minutes for ramekins until the edges are set.
  8. Cool in the water bath for 15 minutes, then remove and cool completely on a wire rack.
  9. Refrigerate for at least 4 hours to set fully before serving chilled with whipped cream and a dusting of cinnamon.

Notes

Refrigerate for at least 4 hours to allow the pudding to set fully. Store covered in the refrigerator for up to 4 days.
