- Place chicken thighs at the bottom of the slow cooker.
- Add potatoes, carrots, celery, onion, and garlic on top of the chicken.
- Season with thyme, rosemary, salt, pepper, and the bay leaf.
- Pour in chicken broth until ingredients are mostly submerged.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Remove chicken to a plate and shred with two forks.
- Melt butter in a saucepan, whisk in flour to make a roux, and cook for 1-2 minutes.
- Slowly whisk in cream and milk, cooking for 3-4 minutes until thickened.
- Pour the cream mixture into the slow cooker and stir to combine.
- Return shredded chicken to the pot, adjust seasoning, and garnish with parsley before serving.

Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
