  • 1.5 cups cooked shredded chicken
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup corn kernels canned or frozen
  • 1 cup cooked white or brown rice
  • 1 cup enchilada sauce red or green
  • 1/2 cup sour cream
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the shredded chicken, black beans, diced tomatoes, corn, cooked rice, enchilada sauce, sour cream, chicken broth, chili powder, cumin, garlic powder, salt, and pepper until evenly incorporated.
  3. Spread half of the mixture into the prepared baking dish.
  4. Sprinkle half of the shredded cheese over the first layer.
  5. Add the remaining mixture on top and spread gently.
  6. Top with the remaining cheese.
  7. Bake uncovered for 20-25 minutes until the casserole is bubbly and the cheese is melted and browned.
  8. Remove from the oven and let rest for 5 minutes before slicing.

Notes

Use leftover rotisserie chicken to save time. Let the casserole rest for 5 minutes after baking to ensure it sets properly for easier slicing.
