- Preheat oven to 350°F (175°C) and grease/line two 9-inch round cake pans.
- Whisk flour, sugar, baking soda, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk oil, eggs, and vanilla until smooth.
- Combine wet and dry ingredients, stirring until just combined.
- Fold in grated carrots, crushed pineapple, walnuts, and optional coconut.
- Divide batter evenly into prepared pans and smooth the tops.
- Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
- Cool in pans for 10 minutes, then invert onto wire racks to cool completely.
- Beat cream cheese and butter until smooth, then gradually incorporate powdered sugar and vanilla.
- Frost the cooled cake layers, stacking them and covering the top and sides.
- Refrigerate for 30 minutes to set before slicing.
