Cake Batter
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1/4 cup apple juice
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 cups peeled, diced apples about 2 large apples
Topping and Glaze
  • 1 cup packed brown sugar divided use
  • 1 tsp ground cinnamon for topping
  • 1/2 cup unsalted butter
  • 1/4 cup milk

Method
 

Mixing the Batter
  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. Whisk granulated sugar, oil, eggs, apple juice, and vanilla extract in a large bowl until frothy.
  3. Sift together flour, baking powder, salt, 2 teaspoons cinnamon, and nutmeg in a separate bowl.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Fold in the diced apples gently.
  6. Spread the batter evenly into the prepared baking pan.
  7. Mix brown sugar and 1 teaspoon cinnamon, then sprinkle over the batter.
  8. Bake for 35-40 minutes until a toothpick inserted into the center comes out clean.
Glazing
  1. Melt butter in a small saucepan over medium heat.
  2. Stir in remaining brown sugar and milk, bringing to a gentle boil for 1 minute until thickened.
  3. Pour the warm glaze over the hot cake immediately after removing from the oven.
  4. Cool completely on a wire rack before serving.

Store in an airtight container in the refrigerator for up to 5 days. For best flavor, serve the next day.
