- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Whisk egg whites with an electric mixer until frothy, add cream of tartar, and beat until stiff, glossy peaks form.
- Blend cottage cheese in a food processor or blender until completely smooth and lump-free.
- In a separate bowl, mix egg yolks, baking powder, and salt into the blended cottage cheese until well combined.
- Gently fold one-third of the beaten egg whites into the cheese mixture, then carefully fold in the remaining whites until no streaks remain.
- Spoon the batter into 6 even mounds on the prepared baking sheet and shape into rounded domes.
- Bake for 25-30 minutes until puffed and golden brown.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure eggs and cottage cheese are at room temperature for better volume. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
