  • 4 cups fresh baby spinach 120g
  • 1 cup fresh strawberries sliced, 200g
  • 1/4 cup red onion thinly sliced, 40g
  • 1/4 cup pecans chopped, 30g
  • 1/4 cup feta cheese crumbled, 40g
Dressing Ingredients
  • 1/2 cup balsamic vinegar 120ml
  • 1 tbsp honey 15ml
  • 1 tsp Dijon mustard 5ml
  • 1/4 cup olive oil 60ml
  • salt and pepper to taste

Method
 

Preparation
  1. Wash and dry the spinach leaves thoroughly and place them in a large salad bowl.
  2. Rinse, hull, and uniformly slice the fresh strawberries.
  3. Thinly slice the red onion and separate the rings.
  4. Toast the pecans in a dry skillet over medium heat for 2-3 minutes until fragrant and golden brown.
  5. Whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl.
  6. Slowly drizzle olive oil into the vinegar mixture while whisking continuously until emulsified.
  7. Pour the dressing over the spinach and toss gently to coat.
  8. Add the sliced strawberries and red onion to the bowl and toss to distribute.
  9. Top the salad with the toasted pecans and crumbled feta cheese before serving.

Serve immediately to ensure the spinach remains crisp and the pecans retain their crunch.
