  • 4 boneless skinless chicken thighs about 1.5 lbs
  • 1/4 cup olive oil
  • 1/4 cup lemon juice about 2 lemons
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
Serving and Garnish
  • 1/4 cup Greek yogurt optional
  • 1 tbsp fresh parsley chopped

Method
 

Preparation
  1. Whisk together olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper in a medium bowl.
  2. Combine chicken and marinade in a large bag or dish, massaging to ensure even coating.
  3. Refrigerate for at least 2 hours, or overnight.
  4. Remove chicken from refrigerator 30 minutes before cooking.
  5. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  6. Grill chicken for 5-6 minutes per side until golden brown and internal temperature reaches 165°F.
  7. Transfer chicken to a cutting board and rest for 5 minutes.
  8. Slice against the grain, garnish with parsley, and serve with yogurt.

Notes

Always marinate for at least 2 hours to ensure the lemon tenderizes the meat. Store leftovers in an airtight container in the fridge for up to 4 days.
