  • 1/4 tsp black pepper
  • 2 large flour tortillas approx. 10 inch
  • 2 cups fresh baby spinach

Equipment

  • Mixing bowl
  • Knife
  • Skillet

Method

Preparation
  1. Cut the cooked chicken into small, bite-sized cubes.
  2. In a medium mixing bowl, combine the Greek yogurt and lemon juice until smooth.
  3. Add the diced celery, red onion, and chopped parsley to the bowl.
  4. Stir the chicken into the yogurt mixture until evenly coated.
  5. Season with salt and pepper to taste.
  6. Chill the chicken salad for 30 minutes to allow flavors to meld.
  7. Lay the flour tortillas flat and place baby spinach in the center of each.
  8. Scoop the chicken salad onto the spinach.
  9. Fold the sides of the tortilla inward and roll tightly to secure the wrap.

Notes

Store the chicken salad in an airtight container in the fridge for up to 3 days. Assemble wraps fresh to keep the tortilla from softening.
