  • 2 teaspoons Dijon mustard 10g
  • 2 teaspoons Worcestershire sauce (halal) 10g
  • 2 tablespoons lemon juice 30ml

  • 1/4 teaspoon black pepper 0.5g
  • 1/2 cup plain yogurt 120g, optional for creaminess

Equipment

  • Mixing bowl
  • Whisk
  • Glass jar

Method

Preparation
  1. In a medium bowl, whisk together the egg yolks, garlic, Dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper.
  2. Whisk constantly while adding the olive oil in a slow, steady stream until the mixture emulsifies and thickens.
  3. Stir in the grated Parmesan cheese until evenly distributed.
  4. Whisk in the plain yogurt if using for a lighter, tangier finish.
  5. Taste and adjust seasoning with additional lemon juice, salt, or pepper as needed.
  6. Transfer the dressing to a jar with a tight-fitting lid.
  7. Refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

Store in an airtight jar in the refrigerator for up to 3 days. Shake well before each use. For a creamier texture, use a hand blender or food processor.
