Preparation
- Preheat oven to 400°F (200°C) and grease a 24-cavity mini muffin tin.
- Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- In a separate bowl, beat eggs, then stir in buttermilk and melted butter.
- Combine wet and dry ingredients, stirring just until no dry streaks remain.
- Let the batter rest for 5 minutes.
- Fill each muffin cavity three-quarters full using a cookie scoop.
- Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
- Melt remaining butter and honey in a saucepan over low heat to create the glaze.
- Brush warm poppers with the honey butter glaze immediately after removing from the oven.
- Cool in the pan for 5 minutes, garnish with parsley if desired, and serve warm.
Notes
Store in an airtight container for up to 5 days. Freeze for up to 3 months. Reheat in a 350°F oven for 5-7 minutes.
