  • 4 cups ripe peaches, sliced
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
Crumble Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter cold and cubed

Method
 

Assembly
  1. Preheat oven to 375°F (190°C).
  2. Combine peaches, granulated sugar, lemon juice, vanilla, cinnamon, nutmeg, and salt in a large bowl. Toss and let macerate for 10 minutes.
  3. Mix oats, flour, and brown sugar in a separate bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Pour the peach mixture into a 9-inch baking dish and spread evenly.
  5. Sprinkle the oat crumble topping evenly over the peaches.
  6. Bake for 35-40 minutes until golden brown and bubbling.
  7. Cool on a wire rack for at least 15 minutes before serving.

Notes

Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 3 months; thaw before reheating.
