Baking
- Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Whisk flour, baking powder, baking soda, and salt in a medium bowl; set aside.
- Beat butter and sugar in a large bowl until light and fluffy.
- Add honey, eggs, and vanilla extract; beat until smooth.
- Gradually add dry ingredients and buttermilk alternately, mixing just until combined.
- Toss chopped peaches with 1 tablespoon of flour and gently fold into the batter.
- Divide batter among liners and bake for 18-22 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Frosting and Assembly
- Beat butter and cream cheese in a large bowl until smooth.
- Add powdered sugar one cup at a time, beating until incorporated.
- Stir in vanilla, honey, and heavy cream until light and fluffy.
- Frost completely cooled cupcakes and garnish with peach slices and mint leaves.
