Ingredients

Main Ingredients
  • 1.5 lbs large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1 tsp salt
  • 1/2 tsp black pepper
Garnish
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime wedges for serving

Equipment

  • Large cast-iron skillet
  • Medium mixing bowl
  • Tongs

Method

Preparation
  1. Whisk together olive oil, lime juice, garlic, scotch bonnet pepper, ginger, allspice, thyme, cinnamon, nutmeg, cloves, salt, and black pepper in a medium bowl.
  2. Add shrimp to the marinade, toss to coat, cover, and refrigerate for 30 minutes.
  3. Heat a large cast iron skillet over medium-high heat for 3 minutes.
  4. Remove shrimp from marinade, letting excess drip off, and place in a single layer in the hot skillet.
  5. Cook for 2 minutes without moving until a golden-brown crust forms.
  6. Flip the shrimp and cook for another 1.5-2 minutes until opaque and cooked through.
  7. Remove from heat and transfer to a serving platter.
  8. Sprinkle with green onions and cilantro, and serve immediately with lime wedges.

Notes

Do not over-marinate the shrimp; 30 minutes is ideal to infuse flavor without affecting texture. Ensure the skillet is hot to achieve a proper sear.
