  • 1 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 pound lean ground beef
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • 1 can crushed tomatoes 400g
  • 4 cups low-sodium chicken broth
  • 1 tbsp tomato paste
  • 8 lasagna noodles broken into pieces
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil chopped
  • Salt and black pepper to taste

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Sauté the chopped onion until translucent and fragrant.
  3. Stir in minced garlic and cook until aromatic.
  4. Add ground beef and cook until browned, breaking it apart with a spoon.
  5. Season the meat with oregano, basil, red pepper flakes, salt, and pepper.
  6. Stir in crushed tomatoes, chicken broth, and tomato paste.
  7. Bring the soup to a boil, then reduce heat and simmer for 10 minutes.
  8. Add broken lasagna noodles and cook until al dente.
  9. Stir in heavy cream and Parmesan until the soup is creamy.
  10. Ladle into bowls and garnish with shredded mozzarella and fresh basil.

Notes

Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat on the stovetop over medium heat.
