Preparation
- Preheat oven to 325°F (165°C) and line a 12-cup muffin tin with paper liners.
- Whisk together cake flour and 1/2 cup of sugar in a small bowl; set aside.
- Beat egg whites in a large bowl with an electric mixer on medium speed until foamy.
- Add cream of tartar and salt, beating on medium-high until soft peaks form.
- Gradually beat in remaining 1/2 cup sugar until stiff, glossy peaks form.
- Gently fold in the vanilla extract.
- Sift the flour-sugar mixture over the egg whites in three additions, folding gently until just combined.
- Spoon batter into prepared muffin cups, filling 3/4 full.
- Bake for 18-20 minutes until golden and springy.
- Invert the tin onto a wire rack and cool completely upside down for 1 hour.
Notes
Ensure egg whites are at room temperature for maximum volume. Inverting the cupcakes while cooling prevents them from sinking.
