Instructions
- Preheat oven to 350°F (175°C). Ensure tube pan is ungreased.
- Sift cake flour, 3/4 cup of sugar, and salt together three times. Set aside.
- Beat egg whites with cream of tartar on medium speed until soft peaks form.
- Gradually add remaining 1 cup of sugar, beating on high speed until stiff, glossy peaks form.
- Add vanilla extract and beat briefly to combine.
- Sift flour mixture over egg whites in three additions, gently folding after each addition until no streaks remain.
- Gently fold in whole raspberries.
- Spoon batter into ungreased tube pan, smooth top, and tap pan on counter to release air bubbles.
- Bake for 35-40 minutes until golden brown and a skewer comes out clean.
- Invert pan immediately and cool completely upside down for 2 hours.
- Run a knife around the edges to remove cake, dust with powdered sugar, and garnish with fresh raspberries.
Notes
Cool completely upside down to prevent the cake from sinking. Store in an airtight container for up to 3 days or freeze for up to 1 month.
