Pudding Base
  • 2 cups heavy cream
  • 2 cups whole milk
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 large egg yolks optional
  • 2 tablespoons unsalted butter
Assembly
  • 1 package graham crackers 14 oz
  • 4 large apples peeled and thinly sliced
  • 1/2 cup caramel sauce halal
  • 1 teaspoon ground cinnamon
  • 1 cup prepared vanilla pudding
  • 1/2 cup whipped cream for garnish
  • 1/4 cup chopped pecans optional

Method
 

Pudding Preparation
  1. Whisk sugar, cornstarch, and salt in a saucepan; mix cream, milk, and egg yolks in a separate bowl.
  2. Combine wet and dry ingredients, cook over medium heat while stirring constantly for 7 minutes until thickened and glossy.
  3. Remove from heat, stir in vanilla and butter, and cool to room temperature.
Layering
  1. Toss sliced apples with cinnamon in a bowl.
  2. Mix prepared vanilla pudding with caramel sauce.
  3. Line a 9x13 dish with plastic wrap and create a base layer of graham crackers.
  4. Spread half the pudding-caramel mixture over crackers, top with apple slices, then add another layer of crackers and remaining pudding.
  5. Add a final layer of graham crackers, cover, and refrigerate for 4 hours.
  6. Top with whipped cream, extra caramel, and pecans before serving.

Notes

Store in the refrigerator for up to 3 days. For best results, refrigerate overnight to ensure the crackers soften into a cake-like texture.
