- Combine graham cracker crumbs and melted butter in a bowl and press firmly into a 9x13-inch baking dish; chill in the refrigerator.
- Whisk milk, sugar, egg yolks, cornstarch, and salt in a saucepan over medium heat until thickened, then stir in vanilla and spread over the crust; refrigerate for 20 minutes.
- Beat cream cheese and powdered sugar until smooth, fold in whipped heavy cream, and spread evenly over the set custard layer.
- Combine pecan pie filling with toasted pecans and spoon over the cream cheese layer.
- Heat heavy cream until simmering, pour over chocolate chips, stir until smooth, and pour the ganache over the pecan layer.
- Refrigerate for at least 4 hours or overnight until fully set, then garnish with whipped cream and pecans before serving.
