  • 1 lb boneless skinless chicken thighs cut into bite-sized pieces
  • 1 medium yellow onion diced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb potato gnocchi
  • 1/2 cup frozen peas
  • fresh parsley chopped, for garnish

Cooking Steps
  1. Heat olive oil in a large pot over medium-high heat and brown the chicken pieces until golden. Remove chicken and set aside.
  2. Reduce heat to medium, add onion, carrots, and celery, and cook until softened, scraping up browned bits.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over vegetables and stir for 1-2 minutes until fully incorporated.
  5. Whisk in chicken broth, milk, thyme, rosemary, salt, and pepper; bring to a gentle simmer.
  6. Return chicken to the pot and simmer for 2-3 minutes to meld flavors.
  7. Add gnocchi and simmer for 3-4 minutes until tender and floating.
  8. Stir in frozen peas and cook for 1-2 minutes until heated through.
  9. Garnish with fresh parsley and serve hot.

Notes

Store in an airtight container in the fridge for up to 4 days. Brown the chicken well to build flavor in the sauce.
