Cooking Steps
- Heat olive oil in a large pot over medium-high heat and sear chicken pieces until golden brown, about 7 minutes total.
- Remove chicken from the pot and set aside.
- Sauté diced onion in the same pot until translucent, then add minced garlic and cook for 30 seconds.
- Toast the orzo pasta in the pot for 1 minute until fragrant.
- Stir in the diced tomatoes with juices, chicken broth, oregano, basil, and red pepper flakes.
- Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes until orzo is tender.
- Return chicken to the pot and heat through for 2 minutes.
- Stir in Parmesan cheese until creamy and garnish with fresh basil before serving.
