  • 2 tbsp mayonnaise
  • 1 clove garlic minced
  • 1 tbsp lime juice
  • 1/4 cup crumbled cotija cheese or feta
  • 2 tbsp fresh cilantro chopped
  • 1/4 cup red onion diced
  • 1 avocado sliced
  • 1 lime wedges for serving

Equipment

  • Large skillet

  • Medium bowl

Method

Cooking Steps
  1. Combine chili powder, smoked paprika, cumin, salt, and pepper in a small bowl, then rub the spice mix over the chicken pieces.
  2. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 4-5 minutes per side until golden brown and cooked through.
  3. Transfer the chicken to a plate to rest.
  4. Add corn kernels to the same skillet and cook for 4-6 minutes until charred, stirring occasionally.
  5. Whisk together Greek yogurt, mayonnaise, garlic, and lime juice in a small bowl to make the crema.
  6. Mix the charred corn with half of the cotija cheese, half of the cilantro, and the red onion in a medium bowl.
  7. Slice the rested chicken into bite-sized strips.
  8. Divide rice into four bowls, then top with the spiced chicken and corn mixture.
  9. Drizzle with crema, sprinkle with remaining cheese and cilantro, and garnish with avocado slices and lime wedges.

Notes

Store in an airtight container for up to 3 days. Keep crema separate to prevent sogginess. For best charring, use fresh corn and pat dry if using frozen.
