  • 1 lb large shrimp peeled and deveined
  • 12 oz smoked turkey sausage sliced into rounds
  • 1 lb baby red potatoes halved
  • 3 ears corn each cut into 3 pieces
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • 2 tbsp unsalted butter melted
  • 2 tbsp fresh parsley chopped
  • 1 whole lemon cut into wedges

Method
 

Preparation
  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. Combine potatoes and corn in a large bowl with 2 tablespoons olive oil and spices; toss to coat.
  3. Spread potatoes and corn on the sheet pan and roast for 15 minutes.
  4. Toss shrimp and turkey sausage in the same bowl with the remaining olive oil and Cajun seasoning.
  5. Remove pan from oven, push vegetables to the sides, and add shrimp and sausage to the center.
  6. Return to oven and roast for 8-10 minutes until shrimp are opaque and sausage is caramelized.
  7. Drizzle melted butter over the pan and garnish with fresh parsley.
  8. Serve immediately with lemon wedges squeezed over the top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Avoid microwaving to keep the shrimp from becoming rubbery.
