Method

Steps
  1. Bring a large pot of salted water to a vigorous boil and add shrimp, listening for the hiss; cook 2-3 minutes until pink and opaque, then immediately plunge into an ice bath until cold and crisp.
  2. Whisk mayonnaise, sour cream, ketchup, lemon juice, Worcestershire sauce, paprika, salt, and pepper in a bowl until the mixture reaches a smooth, rosy pink color with a tangy aroma.
  3. Taste the dressing to ensure a balanced, creamy, and tangy flavor profile, adjusting seasoning if necessary.
  4. Pat the chilled, springy shrimp dry with paper towels to ensure they are ready for plating.
  5. Chop romaine hearts, rinse, and spin dry until leaves are crisp and emit a fresh, green scent.
  6. Prepare the vegetables by slicing tomatoes into wedges, cucumbers into rounds, and avocado into slices, keeping the avocado in lemon water to maintain color.
  7. Arrange the crisp lettuce on a platter or in bowls to create a fresh, green base.
  8. Place the cooked shrimp atop the lettuce, ensuring the pink and orange hues contrast visually with the green leaves.
  9. Artfully arrange the egg quarters, tomato wedges, cucumber, and avocado around the shrimp to create a vibrant, appetizing pattern.
  10. Drizzle the creamy dressing generously over the salad, allowing it to coat the ingredients and flow down the colorful components.
  11. Garnish the dish with fresh chopped chives for a pop of color and mild onion aroma, and place lemon wedges on the side.
  12. Serve immediately while the salad remains cold, crisp, and refreshing.

Notes

Chill serving plates for 15 minutes before assembly to keep the salad crisp. Dressing can be made one day in advance for better flavor development.
