Preparation
- Heat olive oil in a skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent.
- Add minced garlic to the skillet and cook for 30 seconds until aromatic.
- Transfer the onion-garlic mixture into the slow cooker.
- Add diced potatoes, broccoli florets, and vegetable broth to the slow cooker and stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are fork-tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in fresh spinach, heavy cream, salt, pepper, and nutmeg.
- Cover and cook on high for an additional 10 minutes to wilt the spinach and heat through.
- Serve hot, garnished with fresh chopped parsley.
Notes
Store in the fridge for up to 5 days or freeze for up to 3 months. For extra creaminess, stir in 2 tbsp of cream cheese at the end.
