Preparation
- Brown the ground beef in a large skillet over medium heat until no longer pink, about 8 minutes.
- Add diced onion and minced garlic to the skillet and cook for 3 minutes until fragrant.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for 1 minute.
- Transfer the mixture to a slow cooker and add black beans, diced tomatoes with green chilies, tomato sauce, and beef broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in shredded cheddar cheese 20 minutes before serving until melted.
- Adjust seasoning with salt and pepper, then serve with desired toppings.
Notes
Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Drain excess fat from beef after browning for best results.
