  • 1 lb ground beef
  • 1 can black beans rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 1 can tomato sauce
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 1/4 cup beef broth

Method
 

Preparation
  1. Brown the ground beef in a large skillet over medium heat until no longer pink, about 8 minutes.
  2. Add diced onion and minced garlic to the skillet and cook for 3 minutes until fragrant.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for 1 minute.
  4. Transfer the mixture to a slow cooker and add black beans, diced tomatoes with green chilies, tomato sauce, and beef broth.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in shredded cheddar cheese 20 minutes before serving until melted.
  7. Adjust seasoning with salt and pepper, then serve with desired toppings.

Notes

Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Drain excess fat from beef after browning for best results.
