Cooking Steps
- Heat olive oil in a large skillet over medium heat and sauté onions until translucent and golden.
- Add garlic and bell pepper to the skillet and cook for 2 minutes until aromatic.
- Transfer the mixture to a slow cooker and add broth, corn, tomatoes, chipotle, adobo sauce, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3 hours.

Notes
For a smoother texture, blend 1-2 cups of the finished chowder and stir it back in. Leftovers can be stored in the fridge for up to 5 days or frozen for up to 3 months.
