Cooking Process
- Heat olive oil in a skillet and brown the chicken pieces for 4-5 minutes.
- Add onion and cook until translucent, then add garlic and cook for 1 minute.
- Transfer chicken and onion mixture to a slow cooker, add beans, chilies, broth, and spices.
- Cook on low for 6-7 hours until chicken is tender.
- Whisk heavy cream and sour cream together, then stir into the slow cooker.
- Stir in Monterey Jack cheese until melted.
- Add cornstarch slurry and cook for 5-10 minutes until thickened.
- Adjust seasoning and serve hot garnished with cilantro, jalapeño, tortilla chips, and lime.
