Base Preparation
- Melt butter in a large skillet over medium heat and sauté onion, celery, and carrots until tender.
- Stir in minced garlic and cook for 1 minute.
- Add flour to the vegetables, stirring constantly for 2 minutes to cook out the raw flavor.
- Whisk in chicken broth and milk, then add thyme, sage, salt, and pepper; bring to a gentle simmer.
Slow Cooking
- Transfer the mixture to a slow cooker and stir in the shredded turkey, peas, and corn.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until hot and bubbly.
Baking and Serving
- Preheat oven to 400°F (200°C).
- Roll out puff pastry and cut into desired shapes.
- Ladle soup into oven-safe bowls, top with pastry shapes, and brush with beaten egg.
- Bake on a baking sheet for 15-20 minutes until pastry is puffed and golden brown.
Notes
Store soup and pastry separately in the fridge for up to 4 days. Freeze soup base for up to 3 months.
