  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes undrained, 14.5 oz
  • 1 can tomato sauce 8 oz
  • 2 cups beef broth
  • 1 cup sliced mushrooms
  • 1 green bell pepper diced
  • 1/2 cup sliced black olives
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • 1 to taste salt and pepper
Toppings
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • fresh basil leaves for garnish

Method
 

Cooking Steps
  1. Brown the ground beef in a large skillet over medium-high heat until fully cooked.
  2. Add onion and garlic to the skillet, cooking until fragrant and translucent.
  3. Transfer the beef mixture to the slow cooker and stir in the tomatoes, sauce, broth, mushrooms, bell pepper, olives, and herbs.
  4. Season with salt and pepper, then cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. Ladle soup into oven-safe bowls and top with mozzarella and Parmesan cheese.
  6. Broil the bowls for 2-3 minutes until the cheese is melted and bubbly.
  7. Garnish with fresh basil and serve hot with crusty bread.

Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
