Preparation
- Sauté onion, carrots, and celery in olive oil over medium heat for 5-7 minutes until softened.
- Add minced garlic and cook for 1 minute until fragrant.
- Transfer vegetables to a slow cooker and add broth, tomatoes, chickpeas, frozen vegetables, herbs, salt, and pepper.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Whisk together dumpling ingredients in a medium bowl until just combined.
- Stir almond milk and cornstarch slurry into the soup.
- Drop spoonfuls of dumpling batter onto the soup, cover, and cook on high for 20-25 minutes.
- Garnish with fresh parsley and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Soup freezes well without dumplings for up to 3 months.
