Preparation
- Pat chicken dry and season with salt, pepper, and a pinch of cumin.
- Sear chicken in a skillet with 1 tbsp oil over medium-high heat until golden brown.
- Remove chicken and sauté diced onion in the same skillet until soft.
- Add minced garlic, green chiles, and spices to the skillet and cook until aromatic.
- Deglaze the skillet with 1 cup of chicken broth, scraping up browned bits.
- Combine onion mixture, remaining broth, and beans in the slow cooker.
- Place chicken in the slow cooker and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Shred the chicken using two forks and return to the slow cooker.
- Stir in heavy cream and shredded cheese until smooth and melted.
- Ladle into bowls and top with fresh cilantro and jalapeños.
