Method
 

Steps
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and dark brown sugar in a large bowl until smooth, light, and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then stir in the vanilla extract until the mixture is glossy.
  4. Whisk flour, baking soda, and salt together in a separate bowl.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes.
  7. Roll the dough into 1.5-inch balls and coat each ball evenly in granulated sugar.
  8. Place balls 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes until edges are set but centers remain soft.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough for at least 30 minutes to prevent spreading. Store in an airtight container for up to 1 week or freeze unbaked dough balls for up to 3 months.
