Preparation
- Pat the chicken thighs dry with paper towels.
- Combine paprika, garlic powder, onion powder, oregano, thyme, cayenne, salt, and black pepper in a small bowl.
- Drizzle 1 tablespoon of olive oil over chicken, then rub with the spice mixture until evenly coated.
- Let chicken rest at room temperature for 15 minutes.
- Heat a cast-iron skillet over medium-high heat for 2 minutes.
- Add remaining 1 tablespoon olive oil and butter to the skillet.
- Place chicken in the skillet and cook for 5-6 minutes until deep golden brown.
- Flip the chicken and cook for another 5-6 minutes until the internal temperature reaches 165°F.
- Add minced garlic and lemon juice in the last minute of cooking, stirring to coat.
- Transfer to a plate, spoon pan juices over the chicken, garnish with parsley, and rest for 5 minutes before serving.
