  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted and cooled
  • 2 large eggs room temperature
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 tsp salt
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice
  • 1 tsp lemon zest optional

Method
 

Instructions
  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. Whisk granulated sugar and melted butter in a large bowl until glossy.
  3. Add eggs one at a time, whisking thoroughly after each addition.
  4. Stir in lemon zest and fresh lemon juice.
  5. Whisk flour, cornstarch, and salt in a separate bowl, then fold into the wet mixture until just combined.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 23-25 minutes until edges are golden and the center is set.
  8. Cool completely in the pan on a wire rack for about 1 hour.
  9. Whisk powdered sugar and lemon juice in a small bowl until smooth to create the glaze.
  10. Pour glaze over cooled brownies, sprinkle with extra zest, and let set for 20-30 minutes before slicing.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For easier slicing, use a plastic knife or wet the blade between cuts.
