Preparation
- Preheat oven to 375°F and line a 9x13-inch baking pan with parchment paper.
- Whisk flour, sugar, baking powder, and salt in a large bowl.
- Cut cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Stir in the beaten egg until the dough just comes together.
- Press two-thirds of the mixture into the prepared pan to form a solid crust.
- Bake the crust for 12-15 minutes until lightly golden; remove and cool slightly.
- Combine cherries, sugar, cornstarch, lemon juice, and vanilla in a saucepan.
- Cook over medium heat for 5-7 minutes until the filling thickens and becomes bubbly.
- Cool the filling for 5 minutes, then spread it evenly over the pre-baked crust.
- Sprinkle the remaining crumble mixture over the cherry filling.
- Bake for 25-30 minutes until the top is golden and the filling is bubbly.
- Cool completely on a wire rack before lifting with parchment overhang and cutting into squares.
Notes
Keep butter and egg cold for a flakier crust. Let the bars cool completely before cutting to ensure clean, neat squares.
