  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/4 cup Parmesan cheese, grated plus more for garnish
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp dried oregano
  • fresh parsley, chopped for garnish

Method
 

Cooking Instructions
  1. Melt the butter in a small saucepan over medium heat until it begins to foam.
  2. Add the minced garlic and sauté until fragrant and lightly golden.
  3. Whisk in the flour and cook for 1 minute to create a smooth roux.
  4. Gradually pour in the milk while whisking constantly to prevent lumps.
  5. Simmer on low heat for 2-3 minutes until the sauce thickens enough to coat the back of a spoon.
  6. Remove from heat and stir in the Parmesan cheese until melted.
  7. Season with salt, black pepper, and dried oregano.
  8. Pass through a fine-mesh sieve if a smoother texture is desired.
  9. Transfer to a container, cool slightly, and garnish with parsley before serving.

Notes

Store in an airtight container in the fridge for up to 5 days. Reheat gently on the stovetop with a splash of milk if needed.
