  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced pickles

Equipment

  • Large skillet
  • Mixing bowls
  • Wire rack
  • Baking sheet

Method

Marinating and Breading
  1. Submerge chicken in pickle brine in a shallow dish, cover, and refrigerate for at least 4 hours.
  2. Remove chicken from brine and pat completely dry with paper towels.
  3. Set up a breading station with flour, beaten eggs, and a mixture of panko, ranch seasoning, garlic powder, onion powder, pepper, and salt.
  4. Dredge each piece in flour, dip in egg wash, and press firmly into the panko mixture.
Cooking
  1. Heat oil in a large skillet over medium heat.
  2. Fry chicken for 4-5 minutes per side until deep golden brown and the internal temperature reaches 165°F.
  3. Transfer chicken to a wire rack to drain.
Sauce and Assembly
  1. Whisk together mayonnaise, sour cream, relish, fresh and dried dill, and lemon juice in a small bowl.
  2. Warm tortillas in a dry skillet for 20-30 seconds per side.
  3. Assemble tacos by spreading sauce on tortillas, then adding lettuce, tomatoes, sliced pickles, and crispy chicken strips.

Notes

Ensure chicken is thoroughly dried after marinating to guarantee a crispy crust. Store chicken and toppings separately to maintain freshness.
